Recipe from Zanzibar

 

MUESLI CHEESECAKE

Recipe by the House of Spices Zanzibar

 

Ingredients for Muesli

2 teaspoons vanilla essence
1/2 cup water
6 cups rolled oats
1/2 cup flaked almonds
1/4 cup chopped walnuts
1 cup coconut flakes
3/4 cup sultanas
2 spoons of honey

Method:

Pre heat oven to 150 degrees Celsius.

Combine honey, vanilla, cinnamon and water in a jug and microwave on high for a minute or until the mixture is well combined.

In a very large bowl combine the oats with the wet ingredients and stir until thoroughly mixed.

Spread this mixture out onto two very large baking trays. Bake for about 25 minutes until the mixture is turning a light golden brown. Several times whilst cooking, the oats should be removed from the oven and stirred so they bake evenly. Allow to cool.

Mix the cooked oats with the remaining ingredients.

 

To make the CHEESE CAKE

Filling

·  3 (8oz) packages cream cheese, softened

·  1 1/2 cups sugar

·  4 eggs, separated

·  1 tbsp lemon juice

·  1 tsp vanilla
 

In the bowl of an electric mixer, mix together cream cheese, sugar, 4 egg yolks, lemon juice and vanilla.

In another bowl, beat 4 egg whites until stiff and creamy.

Fold egg whites into cream cheese mixture.

Place the Muesli in a springform pan.

 

Pour Cheesecake mixture over this.

Bake for 35 minutes. Turn off the oven and leave the cheesecake in the oven for another hour with the door closed.

Freeze several hours before serving. Remove from freezer and remove from pan before allowing the cheesecake to thaw.
