Millefeuille Tuna Salad
For one person
100GR YELLOWFIN TUNA
1 TABLE SPOON SESAME SEEDS
1 TABLE SPOON THAI SWEET CHILI SAUCE
2 SLICES ONION
3 ROUND EGGPLANT SLICES
-Poach the tuna, according to taste
-Cut the tuna into cubes, and do the same with the mango, avocado and cucumber
-In a separate bowl, marinate the mango, avocado, cucumber and sesame seeds in vinaigrette with one pinch of salt and one of black pepper. Add Thai Sweet Chili sauce
-Bread the eggplant slices and deep fry till they become brown and crispy
Mise en place
Lay one slice of eggplant in the center of the plate and pour over this the tuna, avocado, mango, cucumber and the mixture in the bowl
After that, another slice of eggplant and repeat the mixture with tuna, mango and avocado, cucumber etc making a second layer.
Repeat one more layer and garnish with the 2 length of onion and a sprig of parsley.
Complete the dish by garnishing it like a sunbeam.
